In early 1900’s Our Founder - Patrizia Norelli-Bachelet (Thea) and her family emigrated from Italy to USA and later to India. They came to Pondicherry to meet The Mother at Sri Aurobindo Ashram. Few years later, the Ashram re-established their centre as ‘Aeon Centre of Cosmology’ in Pethuparai Village (17 KM from Kodaikanal).
As Thea is from Italy, she had a wide knowledge about making Artisanal European Cheeses and she used to make variety of cheeses, especially the parmesan style (a hard cheese from the province of Parma Italy).
To add more value to her knowledge, Thea has been fortunately gifted with a Cow and a Horse. Provided with the beautiful climate in Kodaikanal, Thea started implementing her European cheese making expertize in the native cow’s milk resulting in delightful Parmesan and Gouda.
As the cheeses have been textured in the natural cool breeze from Kodaikanal hills it gets matured and tastes well, so it has attracted a lot of customers. The artisanal cheeses have started selling and Thea has built a huge aging cellar made up of stone and cement to make more cheeses.
“In the year 1990, Caroselle Dairy Products ‘The Gourmand’s Cheese’ was officially established and in 2000, the name ‘Caroselle’ name was registered and has been officially branded with its unique label.”
In hill stations like Kodaikanal, horses played a predominant role in carrying goods and materials from one place to another. Such horses benefitted us during the early days by making our delightful artisanal cheeses to reach our rejoiced customers at different places around the hills. Thus, the swift and energetic horses got a special place in Caroselle cheese - in our Logo!
Carousel has strong connection with tradition of Europe and it is one such place where a horse is represented as an element of joy and happiness. Thus our European style traditional cheese got its name Caroselle Cheese.
The rising awareness in health hazards of consuming artificially aged cheese and the desire of cheese lover for the artisanal and naturally aged cheese had crated the demand for increasing the production of our naturally aged cheese. Tulya Foods which is located in Narnamangalam Village in Perambalur District, equipped with modern technologies and managed by skilled dairy experts were capable to produce the artisanal cheese in large quantity without compromising the disciplines quoted by the founder.
The artisanal cheeses produced in the factory are then aged in traditional cellars at Kodaikanal which maintained by Skamba Valley Food Products. Skamba Valley Food Products had taken the pride responsibility of bringing up the artisanal cheese with a proper quality and reaching out Caroselle Cheeses to the cheese lovers around the world.
In spite of the modern technologies, to retain and deliver the deliciousness of the artisanal cheeses, we are following the traditional cheese making process in this modern era.
